Shopping help for the collegiate chef?

Hi everyone,
3 CommentsI’m an aspiring executive chef, and a full-time college student. Since I’m out on my own now, I figure it’s time that I buy my own cookware (pots and pans, knives). I’ve been saving my money for a while to buy a good set of knives (I was thinking Henckel), but I just wanted to know if anyone has any other suggestions. I’d also like some input on a brand of pots and pans to buy. I don’t have a lot of money set aside for that, so price as well as quality is being kept in mind.

Do you like to keep your ^^old ^^pots and pans or do you throw them out?

Sometimes a handle is missing or a lid is missing, do you still keep pots and pans anyways. Perhaps it is because you have had them for a long time. Even when you buy new ones is it hard to get rid of the old ones.

Should the person making dinner serve it up?

My fiance makes dinner every once in a while. She’ll annouce when its ready and then plate herself up some food from the different pots and pans and go sit down. I always look at her like, “are you kidding?” When I make dinner I always plate the dinner for the person I’m cooking for and make sure they are served first. Am I wrong in expecting her to hand me a plate with the food on it, or should I be happy to complete to final step and put the different parts to the dinner together on my own plate?

Dishwasher question?

I have a portable dishwasher which hooks up to my kitchen sink. It has the settings “pot and pans” and “normal”. Which one would be better to use for washing the dishes? Is there a difference in how they wash?

Could anyone offer suggestions as in what to look for and what to avoid when buying pans. I’m not much of a chef or anything, but I like to make informed purchases and I value quality, but can’t swing calphalon or anything like that. Thanks.

Aluminum and Alzheimers?

I have heard all about cooking in the old (Club) aluminum pots and pans and I have none and don’t use them (I don’t think they are even sold anymore). BUT my mother makes us crazy about not cooking in the disposable (Reynolds) aluminum trays for big family parties. Specifically is there any known harm to cooking in these trays. Cooking for large family functions in regular pans just makes for extra difficult cleanup after the party!!
